Olive oil biscuits (Koulourakia)
- 3 cups olive oil
- 2 cups sugar
- Juice of 1 orange and 1 lemon
- 5 tbsps brandy
- 1 tbsp cinnamon
- 2 teaspoons baking powder
- 1 teaspoon γλυκού baking soda
- 1 cup roasted sesame seeds
- 1200 gr flour
In a large bowl beat olive oil and sugar until creamy. Add baking soda diluted in juice, cinnamon, baking powder diluted in brandy and sesame seeds, beating all the while. Slowly sift flour as much as needed until the dough is soft and elastic. Cover and put dough in refrigerator for half an hour. Take small pieces of dough, the size of a small walnut, and roll into a rope. Join the ends to form circles and place them on baking sheet. Bake them in moderate heat for 20 minutes.
