Bean soup
- ½ kg of beans
- 4 carrots cut into rings
- 2 onions, chopped
- 1 cup olive oil
- 5 tomatoes chopped
- 1 chili pepper (optional)
- chopped celery, salt, pepper
The previous night we put the beans in water to soak. The next day, boil the beans in a saucepan half full of water until almost done, drain and keeping the broth. Saute onion in oil and add the carrots and beans. Pour tomato, celery, pepper, salt, pepper and 6.5 cups of the broth. Leave over a medium heat until beans are cooked.
